Falafel & Halloumi Stacks

Get a double whammy of Middle Eastern favourites with these veggie burgers.

Falafel & Halloumi Stacks

Serves 4

Prep 20 mins /Cook 20 mins /Vegetarian

Ingredients:

• 1 x 400g tin chickpeas , drained
• 1 garlic clove , crushed
• 1 tsp ground cumin
• ½ tsp ground coriander
• 1 tsp mild chilli powder
• 1 tbsp plain flour
• olive oil
• 1 x 250g block halloumi cheese , cut into 8
• 4 crusty rolls
• 1 head Little Gem lettuce
• 2 tomatoes , sliced
• chilli sauce
• ½ 200g tub houmous


Method:


Whizz the first 6 ingredients in a food processor and form into 4 burgers. Chill for 10 minutes, then fry in a little olive oil until crisp.
Grill the halloumi. Fill the rolls with falafel, halloumi, salad, chilli sauce and houmous.
