Preparation time: 5
Cooking time: 10
3 courgettes, yellow or
100ml extra-virgin olive oil
4 cloves garlic, thinly sliced
1 red chilli, halved, deseeded and thinly shredded
A few sprigs of basil, stalks removed
Juice of 1 lemon
Slice the courgettes lengthways, using a potato peeler, then brush the sliced with
oil. Heat a griddle pan on high and cook the courgette ribbons in batches, for around a minute on each side,
until striped golden. Put in a bowl.
Heat the rest of the oil in a small pan, then add the garlic and chilli. Heat gently
for two minutes, before adding the basil, mint and lemon juice. Season the courgette ribbons with a little
sea salt and pepper, and pour over the dressing. Leave to marinade for around one hour.
