Sirloin Steak with Sherry
4 sirloin steaks 6-8 oz each and 1
3 tbsp Spanish olive oil
5 garlic cloves
125ml dry Spainish sherry
salt and pepper
fresh flat leafed parsley chopped to
crusty bread to serve (optional)
Cut the steaks into 1 inch cubes and put in a large
shallow dish. Finely chop 2 garlic cloves and sprinkle over the steak cubes. Season genourously with
salt and pepper and mix together well. Cover and leave to marinate in the fridge for 1-2
Heat the oil in a large frying pan. Slice the remaining
garlic and add to the pan. Cook over a low heat, stirring for 1 minute or until golden brown. Increase
the heat to medium-high, add the steak cubes and cook stirring constantly for 2-3 minutes until nearly
browned and cooked to your liking.
Add the sherry and cook until it has evaporated slightly.
Season to taste with salt and put into a warmed serving dish.
Garnish with the chopped parsley and serve hot accompanied
by chunks of crusty bread, if using, to mop up the delicious
